Chinese food undergoes a transformation whenever it travels and Japan is no exception.

 

Outside the Chinese districts of major cities, you are more likely to find a Japanese chef serving up an amalgam of Chinese ideas softened to Japanese tastes in very down to earth surroundings.

These will certainly include gyoza (grilled pork dumplings), mabo dofu (tofu in a spicy minced pork sauce) and yaki soba (stir-fried noodles).

Coffee is admittedly expensive and the decor not openly inviting but a good kissaten is worth finding as the quiet atmosphere and the personal touch added by the proprietor can make them real havens amongst the city hubbub.

 

Many kissaten also serve Western-influenced Japanese meals (yoshoku) such as omurice and Japanese-style curry.
